Students will explore the world of colors in vegetables, observing vegetable pigments through a microscope and pro​ceeding to their extraction and separation through chromatography on paper for fruit and vegetables. During the laboratory, students will acquire the importance of a varied supply of the main classes of vegetable pigments​​ in their diet and will compare the biological functions of some pigments in the producing plants and in the human organisms that takes them. ​
