Students will explore the world of colors in vegetables, observing vegetable pigments through a microscope and proceeding to their extraction and separation through chromatography on paper for fruit and vegetables. During the laboratory, students will acquire the importance of a varied supply of the main classes of vegetable pigments in their diet and will compare the biological functions of some pigments in the producing plants and in the human organisms that takes them.
